12-14 lbs.                                         2 ¼ - 3 hours

15-17 lbs.                                         3 – 3 ½ hours

18-20 lbs.                                         3 ½ – 4 hours

21-22 lbs.                                         4 – 4 ½ hours

23-24 lbs.                                         4 ½ - 4 ¾ hours

*Use a meat thermometer and test the temp in a meaty area. Done is 160 – 165 degrees.   Before cooking, rub butter, salt, and pepper onto the skin.

When you remove your bird from the oven, transfer it to a warmed platter, tent with parchment paper (less “steamy” than aluminum foil), and let rest 30 minutes.
